Salads for lazy summer days
Chicken salad
Ingredients
• 1/ 2 cup boiled chicken chunks
• 1 cup lettuce, finely chopped• 2 tbsp olives
• 1 green of spring onions
• 1 tbsp mayo
• 1 / 2 tbsp mustard
Preparation
• In a mixing bowl, combine all the ingredients. Mix well and serve.
Fruity chickpeas salad in honey lemon dressing
Ingredients
• 1 can of chickpeas
• 1 cucumber, finely chopped
• 1 /2 finely chopped bell pepper
• Pomegranate pearls for garnish
• 2 tbsp honey
• 1/2 lemon for juice
Preparation
• Take a mixing bowl and add all the ingredients .
• Mix well by adding lemon and honey and seasoning with salt and pepper as per taste.
Steamed broccoli, carrots and feta salad
Ingredients
• 1 broccoli, medium cut
• 1 carrot, finely chopped
• 2tbsp feta cheese cubes
Preparation
• Steam broccoli and carrots .
• In a mixing bowl , combine steamed broccoli and carrots and season with salt and pepper as per taste .
• Top with feta cubes.
