Iftar recipes: Dahi Phulki with Sweet Corn
Dahi means yoghurt and phulki means dumplings. It is a mixture of sweet yoghurt and spicy dumplings. I gave it a twist by adding sweet corn. It is a very famous dish during Ramadan in south Asian countries.
Ingredients
• 1 cup gram flour (besan)
• 1 teaspoon red chilli powder
• 1 teaspoon turmeric powder
• 1/2 teaspoon garam masala powder
• 1/2 teaspoon coriander powder
• 1/2 teaspoon cumin seeds
• Salt as per taste
• Water for batter
• Oil for frying
• 500g yoghurt
• 2 tablespoons sugar
• Chaat masala
• 1 cup sweet corn
• Coriander and mint leaves for garnish
Preparation
In a bowl add gram flour, red chilli powder, turmeric powder, garam masala, coriander powder, cumin seeds, and salt. Now add water and make a thick paste. Keep the batter for 10 minutes. Heat oil in a pan, drop batter in oil with the help of small spoon one by one and make dumplings until golden brown. After frying directly drop dumplings in water for few minutes. Take a bowl add yoghurt, sugar and whisk it nicely until sugar dissolves then add salt, chaat masala and sweet corn. Mix well.
Now squeeze the dumplings from water and add in yoghurt corn mixture. Heat 1 tablespoon oil add cumin seeds until temper. Now spread the tempered cumin seed on yoghurt and dumplings mixture. Garnish with chaat masala and coriander and mint leaves.
